Probably the only whisky we’ve featured based on a 20th century Nordic political slogan, KAOS lives up to its name. Three single malts distilled from local barley and rye were blended and aged 4-5 years in a combination of 1st fill bourbon and virgin oak casks. Did we mention one of the single malts was smoked with local peat? Ya, there’s a lot going on here. Founded by nine friends in an abandoned bakery on the rural west coast and blitzed to prominence in the early 2010’s as part of the exploding farm-to-table Danish food scene, Stauning describes KAOS as “everything we do, in one bottle”.
Tasting Notes
By The Master of Malt
An intriguing release from Denmark's Stauning, dubbed KAOS! Made from a blend of three of its own whiskies, it showcases its bourbon-matured single malt, malted rye and peated single malt, the result is far from chaotic, full of chocolate, delicate smoke and dried fruit.
Nose
Toasted (and burnt) cereal, which a dusting of baking spice, maple syrup and dark chocolate.
Palate
Smoky spice and a drizzle of treacle, with caramel digestives and cocoa supported by dried apple and sultana sweetness.
Finish
Smoke lingers alongside Lotus biscuits, vanilla and raisin.
