What began with the Bond family hand-foraging botanicals from Macclesfield Forest to distill gin in their kitchen has become Forest Distillery. Their single malt whisky is produced in a 209-year-old inn named The Cat & Fiddle which sits atop what passes for a mountain in England and, at 1689 feet (515 m) above sea level, owns the distinction of being the UK’s highest altitude whisky distillery. Ancient spring water is filtered through moorland peat, barley is grown at a farm down the road, only British oak and coopers are used for barrels, and the ceramic bottles are hand-crafted. Open fermentation is employed to make sure even the yeast is local! All these community efforts lead to one-of-a-kind, lovingly created expressions.
