To complete our opening triplet, we go back to Islay and stick with the wine barrel aging. Another relative newcomer, Kilchoman has been pumping out spirit as an independent distillery to rave reviews for 20 years now. They kept this expression at higher test to ensure the strong citrus notes of the Kilchoman spirit weren’t overpowered by the sherry berries that come from 5-6 years of exclusive maturation. Thankfully it looks like all these risks have paid off with a delicate balance of Sauternes sweetness and that peaty Islay charm.

Butterscotch and floral notes combine with tropical and candied fruits with integrated peat smoke flowing throughout.
